Hello and welcome! I am Nicole and I love cooking, creating and living a healthy vegan lifestyle.
On April 1, 2018, I looked into the mirror and hated what I saw, I knew things had to change. I was unhappy with the way I looked and felt so I plunged head first into a new lifestyle. At 206 pounds and a small frame of 4 feet 11 inches, my quickly declining health was causing more issues than I would care to admit, it was shortening my life. My first step into a new lifestyle was to research as much as I possibly could. I watched Forks over knives and What the Health on Netflix and without a second thought I knew what I had to do. It was time then to take physical action. I adapted the whole foods plant-based diet, and cut out all animals products, processed foods, and the use of oil. Within a month I had lost 15lbs and gained the ability to walk to the bathroom without needing to stop and catch my breath. I continued to research a whole foods plant based diet to be educated and ready to respond to the soon to be asked questions of “what is whole foods plant based”. After a year had passed my diet has remained the same but I now use a different title, vegan. It’s not only my health that matters to me now but the health of every living species and the health of our world. My weight has continued to drop, I am currently at 150 and my health has increased significantly. My perspective of the world has changed and I want to do what I can to increase awareness.
