Vegan Tortilla Soup
Delicious, savory, oil free, hearty soup with a slight kick that is bound to leave you wanting seconds!
Heat a frying pan and toast corn tortilla pieces until chip like.
alternatively you can use bagged tortilla chips or toast them in an oven.
Heat sauce pan and saute onions and garlic in water for 2 minutes
Add in tomato paste and cumin mix to keep from burning
Add in vegetable broth, cilantro, and hot sauce. bring to boil and simmer for 15 minutes.
add tomatoes, beans, zucchini, jalapeño and corn. simmer for another 20 minutes or until zucchini is tender.
Serve hot and top with tortillas and avocado.
